BBQ Chicken Legs

The secret to a good Jerk Chicken on the grill is cooking slow and low. Grants Gourmet Jerk Seasoning help you to create a dish that is so memorable at all your summer gatherings and cook outs. Let me show you how using my 3 steps process, Marinate•Cook•Enjoy!

 

Ingredients


Instructions

Marinate🔪
  1. Wash and Dab chicken with a paper towel to remove excess moisture 

  2. Optional, puncture the meat with a knife or fork several times allow the seasoning to penetrate faster.

  3. Combine 5 to 6 tablespoons of Grants Gourmet Jerk Seasoning with Chicken in a zip lock bag or seal-able container

  4. Marinate Chicken for at least 1/2 hr or longer in the bottom of the fridge

Cook 🔥
  1. Preheat grill to 400°F. All BBQ are different therefore adjust accordingly to avoid fire and/or harm to yourself.

  2. Place chicken on the bottom grill or your sear grill for about 3 to 5 minutes. Sear the meat on both sides to seal in it's juices and get those beautiful grill marks.

  3. Adjust BBQ flames to low or the temperature to approx 250 to 300°

  4. Place the chicken on the warming rack and close grill. Regularly check the grill to avoid flare ups.

  5. In a small bowl mix 2 to 3 tablespoon of jerk seasoning with 1/4 cup of water.

  6. Use a BBQ basting brush to apply a light coat of seasoning to the chicken so that all sides are coated.

  7. Continue to cook slowly on the warmer grill for approx 35 to 45 mins or until a core temperature of 165°F or higher is reached

Option B.

  1. Preheat grill to 400°F. All BBQ are different therefore adjust accordingly to avoid fire and/or harm to yourself.

  2. Place chicken on the bottom grill or your sear grill for about 3 to 5 minutes. Sear the meat on both sides to seal in it's juices and get those beautiful grill marks.

  3. Adjust BBQ flames to low or the temperature to approx 250 to 300°

  4. Mix in a separate bowl 1/4 cup of water with 3 tablespoon of jerk seasoning

  5. Place a baking pan on the warming grill and add in all the seared chicken quarters

  6. Add in the your jerk seasoning and butter

  7. Check the progress periodically and add water as needed so that your chicken and gravy don't dry out.

  8. This can take approx 35-45 minutes or check that the chicken reaches 165°F core temperature .

  1. Allow the chicken to rest and serve with your favourite sides or rice and peas.

  2. I do not recommend chopping up the chicken bones except at joints. Chopping the bones can cause bone splinters and in turn these splinters can hurt you and cause serious medical problems.

Note: you can add more jerk seasoning to enhance the flavour
